A BAKER FROM GOA -BY LUCIO RODRIGUES
Our elders are often heard reminiscing nostalgically about those good old Portuguese days , the Portuguese and their famous loaves of bread . Those eaters of loaves might have vanished but the makers are still there . We still have amongst us the mixers , the moulders and those who bake the loaves . Those age - old , timetested furnaces still exist . The fire in the furnaces has not yet been extinguished . The thud and jingle of the traditional baker's bamboo , heralding his arrival in the morning , can still be heard in some places . Maybe the father is not alive but the son still carries on the family profession . These bakers are , even today , known as pader in Goa . हम अपने बड़ों को अक्सर उन अच्छे पुर्तगाली दिनों को याद करते हुए सुनते हैं । जब वे पुर्तगाली और उनके मशहूर डबल रोटी के बंडलों के बारे में सोचते हैं । उन डबल रोटियों को खाने वाले लोग नष्ट हो सकते हैं , लेकिन उनके निर्माता आज भी वहाँ हैं । हमारे बीच वे मिक्सचर , साँचे और वे रोटी सेकने वाले आज भी हैं । वे समय की कसौटी पर परखी हुई भट्ठियों आज भी अस्तित्व में हैं । उन भट्ठियों में आग आज भी हैं । वे अभी तक बुझी नहीं हैं । परम्परागत बेकर के बाँस की धमक और खनक उसके आगमन की सुबह - सुबह घोषणा करती हुई , कुछ स्थानों पर आज भी सुनी जा सकती हैं । हो सकता है पिता जीवित नहीं , पर बेटा अब भी पारिवारिक धंधे को जारी रखे हुए हैं । ये बेकर आज भी गोआ में पेडर के नाम से जाने जाते हैं ।
During our childhood in Goa , the baker used to be our friend , companion and guide . He used to come at least twice a day . Once , when he set out in the morning on his selling round , and then again , when he returned after emptying his huge basket . The jingling thud of his bamboo woke us up from sleep and we ran to meet and greet him . Why was it so ? Was it for the love of the loaf ? Not at all . The loaves were bought by some Paskine or Bastine , the maid - servant of the house ! What we longed for were those bread - bangles which we chose carefully . Sometimes it was sweet bread of special make . गोआ में हमारे बचपन के दौरान , बेकर हमारा दोस्त , साथी , और मार्गदर्शक हुआ करता था । वह दिन में कम से कम दो बार आया करता था । एक बार , उस समय वह बिक्री के लिए चक्कर लगाने के लिए सुबह निकलता था और फिर दुबारा , जब वह अपनी विशाल टोकरी को खाली करने के बाद लौटता था । उसके बाँस की खनक हमें नींद से जगा देती थी और हम उससे मिलने और उसका स्वागत करने के लिए दौड़ते थे । ऐसा क्यों था ? क्या वह डबल रोटी के प्रति प्रेम के कारण था ? बिल्कुल नहीं । डबल रोटी किसी पास्किन या बास्टईन के द्वारा खरीदी जाती थी , जो कि घर की नौकरानी होती थी । हम जिस चीज के लिए तड़पते थे , वे थी डबलरोटी के छल्ले , जिनका चुनाव हम सावधानीपूर्वक किया करते थे । कई बार यह विशेष प्रकार की बनी मीठी ब्रैड होती थी ।
The baker made his musical entry on the scene with the ' jhang , jhang ' sound of his specially made bamboo staff . One hand supported the basket on his head and the other banged the bamboo on the ground . He would greet the lady of the house with " Good morning " and then place his basket on the vertical bamboo . We kids would be pushed aside with a mild rebuke and the loaves would be delivered to the servant . बेकर अपनी संगीतमय प्रवेश को अपने बाँस के स्पेशल बने हुए डंडे की ' झंग - झंग ' की आवाज के साथ करता था । एक हाथ से अपने सिर पर रखे टोकरे को सहारा देते हुए और दूसरे हाथ से जमीन पर बाँस को बजाते हुए । वह घर की मालकिन को ' गुड मार्निंग ' कह कर अभिवादन करता और तब अपने टोकरे को उर्ध्वाकार बाँस पर रख देता था । हम बच्चे एक हल्की झिड़की के द्वारा दूर हटा दिए जाते और डबल रोटियाँ नौकरानी को दे दी जाती थीं ।
But we would not give up . We would climb a bench or the parapet and peep into the basket , somehow . I can still recall the typical fragrance of those loaves . Loaves for the elders and the bangles for the children . Then we did not even care to brush our teeth or wash our mouths properly . And why should we ? Who would take the trouble of plucking the mango - leaf for the toothbrush ? And why was it necessary at all ? The tiger never brushed his teeth . Hot tea could wash and clean up everything so nicely , after all ! लेकिन हम मानने वाले नहीं थे । हम एक बेंच अथवा मुंडेर पर चढ़ जाते और किसी तरह टोकरी में झांककर देखा करते । मैं आज भी उन डबल रोटियों की विशेष महक को याद कर सकता हूँ । डबल रोटियाँ बड़ों के लिए और गोलाकार बच्चों के लिए । तब हम अपने दाँतों में ब्रुश की परवाह भी नहीं करते थे अथवा मुँह को साफ नहीं करते थे और हमें क्यों करनी चाहिए ? टूथ ब्रुश के लिए आम के पत्ते तोड़ने का कष्ट कौन उठाए ? और आखिर यह आवश्यक क्यों था ? टाइगर कभी दाँतों को ब्रुश नहीं करता । आखिर गर्म चाय सब चीजों को अच्छी तरह साफ कर देती थी ।
Marriage gifts are meaningless without the sweet bread known as the bol , just as a party or a feast loses its charm without bread . Not enough can be said to show how important a baker can be for a village . The lady of the house must prepare sandwiches on the occasion of her daughter's engagement . Cakes and bolinhas are a must for Christmas as well as other festivals . Thus , the presence of the baker's furnace in the village is absolutely essential , The baker or bread - seller of those days had a peculiar dress known as the kabai . शादी के उपहार बिना मीठे ब्रेड के जिन्हें ' बोल ' कहते हैं अर्थहीन हैं , जिस तरह से ही एक पार्टी या भोज बिना ब्रेड के रोमांच खो देती है । यह दिखाने के लिए कि एक बेकर एक गाँव के लिए कितना महत्त्वपूर्ण हो सकता है , इससे अधिक कुछ नहीं कहा जा सकता । घर की महिला को अपनी बेटी की मंगनी पर सैंडविच तैयार करने होते हैं । केक और बोलिन्हास क्रिसमस और अन्य त्यौहारों के लिए जरूरी है । इस प्रकार गाँव में बेकर की भट्ठी का होना अत्यन्त आवश्यक है । उन दिनों के बेकर की एक विशेष पोशाक होती थी जिसे कबाई के नाम से जाना जाता था ।
It was a singlepiece long frock reaching down to the knees . In our childhood we saw bakers wearing a shirt and trousers which were shorter than full - length ones and longer than half pants . Even today , anyone who wears a half pant which reaches just below the knees invites the comment that he is dressed like a pader ! यह एक पीस लम्बी फ्रॉक होती थी जो घुटनों तक पहुंचती थी । हमारे बचपन में हम बेकरों को एक शर्ट और पैंट पहने देखते थे , जो पूरी पैंट से थोड़ा छोटा और नेक्कर से लम्बा होता था और घुटनों से थोड़ा नीचे पहुँचता था । आज भी , जब कोई घुटनों से नीचे तक पहुँचने वाला नेक्कर पहनता है , तो उस पर टिप्पणी की जाती है कि वह एक पेडर की तरह की पोशाक पहने हुए
The baker usually collected his bills at the end of the month . Monthly accounts used to be recorded on some wall in pencil . Baking was indeed a profitable profession in the old days . The baker and his family never starved . He , his family and his servants always looked happy and prosperous . Their plump physique was an open testimony to this . Even today any person with a jackfruit - like physical appearance is easily compared to a baker . बेकर प्रायः महीने के अंत में अपने बिलों की एकट्ठा करता था । महीने के हिसाब - किताब पेन्सिल से किसी दिवार पर लिख दिये जाते थे । बेकरी का धन्धा वास्तव में प्राचीन दिनों में मुनाफे का व्यसाय था । बेकर और उसका परिवार कभी भूखे नहीं मरते थे । वह , उसका परिवार उसके नौकर सदैव सुख एवं वैभवशाली दिखाई देते थे । उनका मोटा - ताजा शरीर इस बात का स्पष्ट प्रमाण था । आज भी जब कोई कटहल जैसा व्यक्ति दिखता है तो उसकी तुलना बेकर से की जाती है ।
